Oat Bran Pancakes

I first started making and eating these when I was doing a semi-candida cleanse under the supervision of my nutritionist. I say “semi” because it wasn’t a strict no sugar type of cleanse. Oat bran has more protein and fibre than oats, but it also tends to be more dense. I still make these all the time because they are easy and very easy to top!

I like to top mine with coconut yogurt, pumpkin seeds, chocolate shavings and figs (my favourite fruit)! Figs are high in fibre, antioxidants and have bone supporting minerals like calcium and manganese. They used to the favoured fruit of ancient olympians. Ingredients:

200 grams of oat bran

2 tbsps of flaxseeds

1 tsp of cinnamon or pumpkin spice

1/4 tsp salt

80 grams of plant based milk—I usually use almond or coconut

325-340 grams of water

1tbsp of coconut milk from a can or melted coconut oil

Method

Mix all ingredients in a food processor and blend until smooth. You can also mix everything manually in a large bowl. Let the mixture sit in the food processor for 5 minutes.

Heat a large pan. Using a tablespoon or scooper pour the batter into the pan. You may be able to fit 1 to 3 pancakes in the pan at a time. Cook the pancakes for about 2 minutes on each side. You should end up with 8-10 pancakes.

Serve with your favourite toppings! Or, stir some berries into the batter and have some blueberry oat bran pancakes.
